Elizabeth\rand I were recently married after dating for 6 months. Before we met, she had been on numerous dates with a variety of people both at BYU and in Texas.

Elizabeth refers to her "stake." This is a term used to describe a group of LDS individuals who live in a specified geographical location. A stake is a collection of "wards" or congregations that meet together each week. She also references a "cowboy shop." These kinds of stores are common in Texas, and usually include clothing, toys, and collectibles that are inspired by the Old West culture.
